Cajeta de Membrillo has been among my favorite holiday treats for as long as I can remember. This year I experimented with the cascara and cores to craft a delicious beverage. Next year I think I'll experiment with the microwave to make the cajeta.

On the other hand, cooked with sugar, membrillo becomes a beautiful sauce, candy, paste, and beverage. When it's applepicking time in your area, it's membrillo time, too.
